Appetizingly Good


I was a little paranoid on Thanksgiving, because I had not planned to have any meat, and our friends were meatetarians.

A funny thing –  everyone loved the appetizer so much, that very little of the actual dinner was eaten! So, in honor of having an appetizer so good that you forget about the entre, I thought I’d post the recipe here:

Anjali’s Infamous Not-So-Thanksgiving-Like Eight Layer Nacho Dip:

2 Cans of Amy’s Black Refried Beans (I’ve done this recipe with many different types of refried beans. These are my favorite by far.)

2-3 Tubs of Guacamole (I’m sure it’s better if you make your own, but I’m too lazy.)

2 Cups of Low Fat Sour Cream (Don’t even try the No Fat Sour Cream in this recipe. It’s terrible.)

10 ounces (give or take) of Shredded Cheddar Cheese

2 Cups of Shredded Green Leaf Lettuce

2 Cups Diced Green Onion

2 Cups Diced Tomato

1 Small Can of Sliced Pitted Black Olives

Layer in the order of the listed ingredients in a 8 X 11 size dish. (Are those the right measurements? Whatever long big dish you have. It looks best in a glass one.) Cover, and refrigerate overnight. Serve the next day with colorful tortilla chips, and salsa on the side.

Tastes great on New Year’s Eve!
